This spicy maple chicken is by far one of the super-easiest recipes, plus yummy!   I like the unusual combination of cumin, chilies, and thyme which complement the roasted “brown’ notes of maple syrup. I’m sure this chicken will taste even better on a charcoal grill! It is easy enough for college going students and young professionals to make for a quick lunch or dinner.

Ingredients:

  • 300g chicken breast
  • ½ teaspoon salt
  • ½ teaspoon cumin
  • ½ teaspoon coriander, ground
  • ½ teaspoon chili, ground
  • ½ teaspoon smoked paprika
  • ½ teaspoon thyme
  • ½ teaspoon rosemary
  • ¼ cup maple syrup
  • 3 tablespoons olive oil

Instructions:

  1. Clean the chicken.
  2. Marinate the chicken with salt, cumin, coriander, ground chili, paprika, thyme, rosemary,  and maple syrup.
  3. While the chicken is marinating heat olive oil in a large wok or frying pan on medium heat.
  4. Add the chicken and cook it for 4-6 minutes on each side until it is nicely brown.

 

Critical Ingredients:

You can skip paprika if you don’t have it. I like using both rosemary and thyme for their aroma, but even parsley will work well.  Maple syrup is critical!
