This spicy maple chicken is by far one of the super-easiest recipes, plus yummy! I like the unusual combination of cumin, chilies, and thyme which complement the roasted “brown’ notes of maple syrup. I’m sure this chicken will taste even better on a charcoal grill! It is easy enough for college going students and young professionals to make for a quick lunch or dinner.
Ingredients:
- 300g chicken breast
- ½ teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon coriander, ground
- ½ teaspoon chili, ground
- ½ teaspoon smoked paprika
- ½ teaspoon thyme
- ½ teaspoon rosemary
- ¼ cup maple syrup
- 3 tablespoons olive oil

Instructions:
- Clean the chicken.
- Marinate the chicken with salt, cumin, coriander, ground chili, paprika, thyme, rosemary, and maple syrup.
- While the chicken is marinating heat olive oil in a large wok or frying pan on medium heat.
- Add the chicken and cook it for 4-6 minutes on each side until it is nicely brown.
Critical Ingredients:
You can skip paprika if you don’t have it. I like using both rosemary and thyme for their aroma, but even parsley will work well. Maple syrup is critical!
