A delicious healthy yet easy green pea based dip – an alternative to making hummus with chickpeas, which are so much more work! Also serves as a nice sauce for roasted vegetables when thinned!
Ingredients:
- 1 cup green peas (fresh or frozen)
- 2 tablespoons sesame seeds click here to buy the quality sesame seeds
- A handful of mint leaves (about 30)
- Small bunch of parsley (approximately same quantity as mint)
- 5 cloves of garlic, crushed
- 1/2 teaspoon salt
- 1 tablespoon lemon juice
- 4-6 tablespoons olive oil click here to buy the superior flavor olive oil
Instructions:
- Steam green peas 5-6 minutes until soft and cooked through.
- Roast sesame seeds in a dry frying pan on medium heat until lightly browned. About 1 minute.
- Grind seeds in a spice grinder or food processor until fine.
- Combine green peas, sesame seed powder, and remaining ingredients in a blender or food processor.
- Add 4 tablespoons of olive oil. Blend for 3-5 minutes on low until thoroughly mixed and smooth. Should have a creamy consistency – add additional olive oil and mix as necessary.
- Serve with freshly cut vegetables or pita chips.
Critical Ingredients: The mint and parsley can be safely replaced by fresh coriander. Even thyme will taste great with peas. The sesame seeds are necessary for flavor, but if you don’t have green chilies, a jalapeño or even green peppercorns in brine would do nicely. I sometimes use safflower oil when I run out of olive oil. No one will know the difference!
