cauliflower and garbanzo bean salad

A healthy salad recipe from the Middle East flavoured with dill and harissa.

Ingredients

  • 250g, or half of a medium-sized cauliflower
  • 250g boiled garbanzo beans, or about half a 15.5 oz. tin of garbanzo beans drained and washed (see note below)
  • 1 medium sized onion, finely chopped
  • 12-15baby tomatoes, halved
  • 3 tablespoons fresh dill, chopped
  • 2 tablespoons olive oil
  • 2 tablespoonsred wine vinegar
  • ½ teaspoon harissa, (see note below)
  • 1 teaspoon salt, or to taste
  • 1 teaspoon sugar

Instructions

  • 1. Cut cauliflower into small florets and steam in a steamer, or a colander placed over boiling for 5 minutes or until tender.
  • 2. Combine cauliflower, garbanzo beans, onion, baby tomatoes and dill in a bowl.
  • 3. Combine ingredients for dressing in another bowl and whisk until blended.
  • 4. Pour dressing onto salad and refrigerate for 1-2 hours, so flavors are absorbed. Serve chilled.
